Jigoku-mushi (literally “hell-steaming”) is a cooking method unique to Beppu. You can cook various food yourself using a heating cooking appliance called Jigoku-gama (hell-pot), which uses the steam heat from hot spring. Depth in taste is added to vegetables in season, fresh local seafoods, and meat when they are cooked fast at high temperature. Also, flavors become condensed due to the component of hot spring water. No extra seasonings are needed. Simply enjoy the food with some salt.
